Salmon and Soba
Salmon and Soba with Miso Dressing
Salmon Filet
- 1 pcg Soba (Buckwheat) noodles
- 1 Red Pepper (sliced)
- 1 Carrot (sliced)
- 1 Cup Snap Peas or any other Veggie (sliced)
- 1 Green Onion
Miso Dressing
- 2 Tablespoon Miso
- 4 Tablespoon Mirin or Honey (I usually do half and half)
- 4 Tablespoon Soy Sauce
- 2 Tablespoon Lime Juice
- 3/4 Cup Sesame Oil
- 3/4 Cup Veg Oil
Directions
- Mix Miso Dressing.
- Pour half over Salmon and marinate.
- Broil Salmon
- Cook Soba Noodles per directions, rinse with cold water and set aside.
- Cut up Veggies and cook over med/high heat for about 5 minutes or until soft.
- Mix soba noodles with Veggies and pour remaining dressing over veg and noodles.
- Top with salmon.
